Ingredients

  • 3 pounds of Yukon Gold potatoes
  • 5 cloves of garlic
  • 4 tablespoons of bacon grease or olive oil
  • 4 sprigs of rosemary
  • Salt and pepper to taste

These potatoes might look fancy, but this recipe is probably a lot easier than you might assume. First, you’ll preheat your oven to 450 degrees Fahrenheit. Then get out a large sheet pan and cover it with parchment paper. Pour out your bacon grease or olive oil, and place your peeled and crushed garlic and rosemary sprigs out on the pan.

At this time, take a knife and cut slits down your potato. You’ll want to cut about two-thirds of the way down. Make the slices relatively thin so that they’ll crisp up nicely when you put them in the oven.

Put the potatoes on the pan, and roll them around a bit, so they get covered in the fat. After that, add some salt and pepper, and bake them in the oven for about 30 minutes.

Take them out after about 30 minutes. You may want to use some tongs to slightly open them up, creating that traditional hasselback potato look you’re going for. Put the potatoes back in the oven for another 30 minutes, and take them out when they’re crispy and golden.
